1 cup raw sugar
1 cup cooked pumpkin
½ cup salad oil
1 tsp vanilla extract
2 cups SR flour, sifted
½ tsp each salt, cinnamon, nutmeg & ground ginger
1 cup raisins
Preheat oven to 180c (160c fan forced) and line 2 baking trays with baking paper.
Combine sugar, pumpkin, oil & vanilla. Add remaining ingredients & mix well.
Drop spoonfuls onto trays. Bake 20mins until golden brown.
Makes about 24.
